1 tbsp lemon zest
1 bunch fresh asparagus
½ cup Huntley & Palmers Black Sesame Rice Crackers, crushed
½ cup Parmesan cheese, grated
salt & pepper
extra virgin olive oil
Preheat oven to 190°.
Melt the butter and mix in the lemon zest. Brush lemon butter onto the asparagus, and arrange the spears flat on an ovenproof tray or pan.
Sprinkle the crushed rice crackers and Parmesan cheese over the asparagus. Season with salt and pepper.
Drizzle with olive oil and bake for 20 minutes.
